A Serendipitous Discovery - In the early days, Scotch whisky was enjoyed straight from the still, without aging. Probably by accident - and certainly by the 1820's - it was discovered that if the spirit was left in a wooden cask for a year or more (preferably more!) it would lose harshness, become richer and more complex, gaining a sublime, natural golden colour. Initially used for shipping sherry, port, brandy and table wines from Europe to Scotland's greatest ports these fundamental oak vessels were put to further use. Now the fiery Scotch spirit could win character from the wood, warmed only by the redolent cask in our cool, damp Highland warehouses. Harmonious Craftsmanship - During the 1970's, 1980's and '90s, the Master Distiller, Richard Paterson, filled French wine casks, Mediterranean Madeira drums, Sherry butts from Jerez de la Frontera, Spain, Marsala barrels from Sicily, Port pipes from the Douro and sweet Bourbon barrels from Kentucky with the fledgling Dalmore spirit. These he has monitored over the passing decades until each cask has matured its contents to perfection and his experimental innovation better understood. Now comes the real art: selecting the casks so their individual characteristics work together, where the whole is greater than the sum of its parts. The goal is balance, complexity and character - a harmony of aromas and flavours. This is what you have in the 1263 King Alexander III, a celebration of their heroic past, crafted in the present and an inspiration to an exciting future. This luxurious aged malt is the result of perfect maturation in a variety of wine casks. Aged aromatic Oloroso and Madeira butts provide great backbone and a structure of crushed almonds and rich citrus fruits. The rich Port and Marsala woods add hints of wild berries and fleshy plums. Warm vanilla notes of creamy toffee from the aged Bourbon barrels combine eloquently with the majestic whispers of ripe red fruits offered up by cabernet sauvignon barriques. Colour: White crystal. Nose: Spicy, smoky, hint of caramelised vegetables. Palate: Rich palate with undertones of vanilla, cinnamon and gentle honey. Finish: Gentle heat with cooked plums and oranges. The agave takes 10 years to reach maturity and there are therefore only ten harvests per century. Each huge agave plant weighs 50 kilos (100 pounds) on average and 10 kilos (20 pounds) of agave are required to produce just one litre of agave spirit. By contrast, sugar cane, barley and grapes can be harvested at least once a year making rum, whisky and brandy rather less expensive to produce. At Destileria Porfidio, they steam-cook the agave plants for at least 24 hours. Once the cooking cycle is complete, the softened agave fibre has to be pressed to separate the agave juices from the agave fibre. Press: As with ultra-premium olive oil, only the first pressing of the agave fibre is used for the production of Porfidio spirits. In addition, Porfidio does not dilute the freshly squeezed agave juice during the pressing process as some manufacturers would, as this would reduce the quality of the agave juice. The agave juice derived from mature agave plants contains natural agave sugar, which is the basis for the subsequent fermentation process. The agave juice is brownish in colour and similar to coffee in appearance. The agave juice is fermented by introducing micro-organisms, or good bacteria, which convert the sugar into alcohol. Bad bacteria would turn the agave juices into vinegar. The fermented agave juice has an alcoholic content of only 12% abv. Destileria Porfidio is the only factory in Mexico which implements quality fermentation in a rigorously controlled and therefore ideal environment. The fermented agave juice is distilled three times, in traditional alambic pots, separating the heads and the tails at each distillation and only keeping the heart of each distillate. Plata Triple-Distilled at 45% alcohol by volume is also the starting point for the ageing process which will over time produce Porfidio Anejo Single-Barrel. Prior to bottling, Porfidio Plata is adjusted to exactly 38% alcohol by volume.

The Turkey Flat Vineyard boasts some of the oldest Shiraz vines in the world. Planted in 1847, these hard-working gnarled old vines are still producing fantastic grapes. They are dry grown with their roots extending metres into the soil in search of moisture. Much of the credit for the best Shiraz made in the Barossa is due to old vines such as these. The fact that these vines still exist is largely due to a far-sighted quarantine scheme, in which South Australia was spared the phylloxera outbreak which devastated the vineyards of Europe, America and subsequently parts of Australia in the late 1800's. The warm 2003 vintage, compared to 2002, produced full flavoured concentrated wines. Each small parcel of Shiraz was vinified separately and matured in French oak barrels. The result is a firmly structured complex Shiraz, with lifted 'primary' fruit aromas of bitter cherries and prunes and 'secondary aromas' of Christmas cake/plum pudding, mocha, and leather/suede. The full-bodied palate has flavours of plums, red fruits, spice, and will definitely improve with careful cellaring of up to 10 years. red wine
