Vinification techniques: The LBV 2000 is a traditional LBV, the grapes being pressed by foot. The wine is not heated or cooled and is unfiltered. This ensures that the grape's full potential is released, as well as providing greater ageing potential. Sensory Appreciation: Colour: An intense, almost opaque red. Aroma/nose: Intense, very elegant and attractive. An exuberant bouquet of forest fruits and fruit preserves. Palate: Fresh and velvety at first. Quite fruity, with a fine background of smooth, silky tannins. Aftertaste: Long and involving, lingering on the palate for some time. Ageing: Aged for four years in used oak casks and vats. Bottling: Bottled four years after harvesting - March 2005. Ageing potential: Promises excellent development in the bottle, but also delightful if drunk now. The wine is not filtered, and is liable to form a deposit. Food pairing: Combines well with most full-fat cheeses. Serving suggestions: Open several hours before serving and decant, if possible. Conservation in private cellars: Lay the bottle on its side in a cool shaded location.
