A Champagne House is eventually judged on the quality of its Brut Non Vintage. It is in the making of such a wine that the true Art of Champagne blending reveals itself. This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine. Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir - 15 to 20% Pinot Meunier - 28 to 33% Chardonnay. These figures vary slightly from year to year according to conditions. The Chef de Caves has to achieve the total consistency of taste, which makes Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless Reserve wines for the blend: from 25 to 35%, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines - perhaps 9 years old - is kept separately to preserve the unique qualities of the vineyard and the vintage. First, Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness so typical of Yellow Label with a symphony of fruit tastes following on. The recipe for the Tonic wine is attributed to the original French monks who settled at Buckfast Abbey in the 1880's. Base wines from Spain, known as mistellas, were imported and to these were added the tonic ingredients according to the old recipe. By the 1920's 1400 bottles were sold annually, 500 from Buckfast and the remainder by post. In 1927 a London wine merchant was visiting the Abbey, and in conversation with the Abbot, Anscar Vonnier, it was decided that the monks would continue to make the Tonic wine with the distribution and sale to be carried out by a separate marketing company. In order to broaden its appeal the Tonic was changed slightly from a rather severe patent medicine to a smoother, more mature medicated wine. Having taken on the marketing of 'Buckfast' the distributing company adopted a reserved promotional approach resulting in the widespread appreciation of the product nationally and internationally. In modern times it continues to be made by the monks of Buckfast Abbey along the same lines and according to the same basic recipe as used in the very early days. The main difficulty lies in the successful addition of inert substances to a base wine - a living and natural entity. The selection of the base wine is thus of prime importance. Today the base mistellas come from France providing the ideal medium for the skill and expertise of the monks to produce a finished product round and mature to the most discerning of tastes.

Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine 'non vintage'. The suggestion of naming it 'Special Cuvée' was immediately approved by Monsieur Bollinger. A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged. Madame Bollinger - 'I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty.'
